Cake Mix Italian Cookie Recipe

Today's blog post is bringing you easy yet delicious cookies that are full of flavor. These delicious, and moist cake mix Italian cookies are sure to be a crowd-pleaser. The best part about these cake mix Italian cookies is the easy cleanup, all the ingredients will be mixed in one bowl. If your looking for an easy Christmas cookie to bake this is it. My family loves these cookies and they don't last long so I'm usually baking them a few times during the Christmas season.


The house is decorated for Christmas and we have our Christmas Tree, now it's time for Christmas cookies. I love Christmas cookies but time is usually a factor and then there's the mess in the kitchen. I love these cake mix Italian cookies because they are delicious and easy to make and all of the ingredients are combined in one bowl. These cookies cook fast in 8-10 minutes and frosting them is simple, with a powdered sugar glaze all you have to do is dip the cookie. The Holidays are a busy time so why not take a shortcut if you can? It's a good thing these cookies are so easy to make because you will want to make more. This recipe is one for the holiday cookie book.


Cake Mix Italian Cookie Ingredients

 

1 box yellow cake mix

3/4 cup vegetable or canola oil

3/4 cup water

2 eggs

3 cups flour

1 tsp baking powder

1/2 teaspoon salt


Powdered Sugar Glaze Ingredients and Instructions

 

1 cup of confectioners sugar

1/2 teaspoon of vanilla

2-3 tablespoons of milk


TIP Start with 2 tablespoons of milk add more if the glaze is too thick. Mix with a hand mixer until all ingredients are combined.


Instructions

1 Preheat the oven to 375 degrees.

2 To a large bowl add all of the dry ingredients and stir to combine.

3 Add wet ingredients to the dry ingredients.

4 Mix all ingredients with an electric hand mixer.


NOTE The mixture will be thick and comes together quickly.


5 Roll the dough into 2-inch balls and place them on a cookie sheet. A heaping teaspoon will give you a 2-inch ball of dough.

6 Bake for 8-10 mins

7 Once the cookies are cool dip them into the glaze.


Helpful Tips

 

  • Let the cookies cool completely before frosting.

  • Place parchment paper under the cooling rack or on a cookie sheet to catch the drippings from the frosting.

  • Store cookies in an airtight container.

  • These cookies freeze perfectly for up to three months.

  • If you don't want to frost the cookies roll them in sugar or sprinkles before baking.

  • Add red or green food coloring to the glaze for fun and festive colors.

  • Cookies will continue to bake while they are cooling. Check the bottom of the cookie if it is golden brown the cookie is done.
