In today's post, I'm sharing a family favorite, pumpkin cream cheese muffins. You don't have to be a big pumpkin fan to love these delicious, flavorful muffins. Pumpkin cream cheese muffins have the perfect combination of pumpkin, spice, and sweet cream cheese. They come together quickly with basic pantry ingredients and a can of pumpkin puree. They taste just like pumpkin rolls.


A pumpkin roll is also a Fall favorite but does take a little more time and effort to make. This pumpkin cream cheese muffin recipe tastes just like a pumpkin roll and since they are muffins you can eat them for breakfast, right? I will link my pumpkin roll recipe below.



Helpful Hints- Be sure to use pumpkin puree, not pumpkin pie filling. Pumpkin pie filling is already flavored with spices and sugars. If you want a robust flavor use pumpkin spice in place of cinnamon.


Even though pumpkin spice is not necessary for this recipe, I'm sharing it as a valuable resource for times when you need a quick solution.


How to make your own pumpkin spice


DIY Pumpkin Spice


4 teaspoons ground cinnamon


2 teaspoons ground ginger


½ teaspoon ground cloves


½ teaspoon nutmeg


½ teaspoon allspice


Mix all spices and store in an air tight container.



You have two options for adding cream cheese to these muffins: either place it on top of the muffin mixture, swirl it around with a toothpick, and then bake it, or layer the pumpkin and cream cheese mixture in the middle of the muffin. I personally prefer swirling the cream cheese on top as it blends well throughout the muffin.


What do I love about this pumpkin cream cheese muffin recipe? Let us start with the perfect amount of pumpkin and cinnamon flavor. These muffins are easy to make and taste just like a pumpkin roll without the extra work. If you are looking for a delicious fall treat, these pumpkin muffins are it.



Why are my muffins dry? Overbaking will cause dry muffins, don't bake muffins for more than 20 minutes. Muffins will continue to bake if they are left in the hot pan, causing them to overcook. Remove your muffins from the pan as soon as they come out of the oven. Over-mixing will also cause dry muffins.


What happens if I overmix muffin batter? Over-mixing muffin batter will cause dry, tough muffins. Muffins are meant to be moist, light, and airy. Mix the dry and wet ingredients until just combined.


How to keep muffins fresh? I have a couple of tips on how to keep your muffins fresh. You've probably noticed storing muffins in a ziplock bag makes them wet, and mushy. An easy solution, use a container with a lid. Place a paper towel on the bottom of the container, then the muffins, and a paper towel on top of the muffins. The paper towel will absorb the moisture that causes the muffins to become damp, mushy, and sticky. A good old-fashioned bread box can be used the same way to store muffins. Lay a tea towel on the bottom of the bread box, then the muffins, and a tea towel on top of the muffins. Avoid plastic wrap; it traps moisture.


What You Will Need - Pumpkin cream cheese muffins

 

1 ¾ cups all-purpose flour

1 tablespoon cinnamon or pumpkin spice

½ teaspoon salt

1 teaspoon of baking soda

¾ cup sugar

½ cup brown sugar

15oz can of pumpkin puree

2 eggs

1 tablespoon vanilla

¼ cup vegetable oil


Cream cheese filling

8oz of cream cheese (softened)

1 cup of confectioners sugar

2 tablespoons butter

1 teaspoon vanilla


Let's get started - How to make pumpkin cream cheese muffins


Step 1: In a bowl, mix the dry ingredients: flour, baking soda, salt, and cinnamon.


Step 2: In a large bowl, mix the pumpkin, brown sugar, and sugar. With an electric mixer beat in the eggs, oil, and vanilla. Slowly whisk in the flour mixture. Don't over-mix, blend until just combined. Fill the muffin tins about ¾ of the way full. Be sure to leave enough room for the cream cheese mixture.


Step 3: In a bowl, beat the cream cheese, sugar, butter, and vanilla until smooth and creamy. Top each muffin with the cream cheese mixture and using a toothpick, or the tip of a knife swirl the cream cheese into the batter.


Step 4: Bake the muffins for 20 minutes 375 degrees.
